Yank Sing is one of my five favorite restaurants in the world, of all time. The food is... traditional, yet with a modern twist. Everything is prepared perfectly -- fish cooked just the right amount, custard tarts with perfect buttery and flaky crusts, even the simple cabbage salad addictive and perfectly balanced.
