I only got one large titanite shard from killing the two giants in Cathedral of the Deep. I did not notice until just now in Farron Keep, having killed both crystal lizards on that bridge after the Stray Demon (both of whom give you large titanite shards upon death); this is why I think I only got one instead of two from the Giants.
